Just a stone’s throw from the Church of St Nicholas in Malá Strana, renowned chef Jan Kaplan concocts dishes served on original Morricone plates. The menu is rather succinct, and goes in two main directions: it perfectly represents traditional Czech cuisine, but will also satisfy lovers of world cuisine. If, during a visit to Prague, you would like to discover the culinary traditions of Bohemia, Jan Kaplan pays tribute to them with, for example, his kulajda, a mushroom and cream soup with a poached egg and accompanied by a Valtice sauvignon, his roast duck with South Bohemian potato dumplings and accompanied by a delicious Bořetice pinot noir, or his jam turnovers glazed with plum brandy and accompanied by a small glass of sparkling wine from Velké Pavlovice. As for world cuisine, it is present here through simpler dishes, and three or four ingredients are generally enough for the chef to achieve perfection. Grilled octopus is given a Mediterranean boost with fava beans and smoked peppers, while lamb chops also stand out thanks to sweet potato puree and a jus of fresh mint. Simple and delicious.
